60 Seconds To Chocolate Chip Heaven

For those late night chocolate cravings, I recommend this quick, individual dessert from picky-palette.com that takes only 60 seconds in the microwave. Add a  scoop of vanilla ice cream and some delicious hot fudge, chocolate syrup, or picky-palette.com's Homemade Magic Shell!

60 Second Chocolate Chip Cookie A la Mode

2 Tablespoons unsalted butter, softened

2 tablespoons granulated sugar

2 tablespoons packed light brown sugar

2 tablespoons beaten egg

1/4 teaspoon pure vanilla extract

5 tablespoons all-purpose Gold Medal Flour

1/4 teaspoon baking soda

1/4 teaspoon kosher salt

1/4 cup chocolate chips

1. Place butter and sugars into a 2-cup ramekin, beat with spoon until well combined. Add beaten egg and vanilla, mixing to combine. Add flour, baking soda and salt. Stir a couple times, then add chocolate chips, stirring to combine. Microwave for 60 seconds then remove. Run a plastic knife around edges, will be slightly gooey, no worries. Cookie will continue to set up in hot ramekin.

2. Top with a large scoop of vanilla ice cream and drizzle with my homemade magic shell. Serve immediately.

Homemade Magic Shell

1 cup semi-sweet chocolate chips or chopped chocolate

2 tablespoons vegetable oil

1. Place chocolate in heat proof bowl and microwave until melted, about 60-75 seconds depending on your microwave. Stir until creamy then drizzle in vegetable oil until well combined, shiny and smooth. Drizzle over ice cream, wait about 60 seconds for sauce to harden and enjoy your homemade magic shell. Place leftover sauce in airtight container and keep room temperature for 2 days. Microwave for 30 seconds before using again.

Makes 1 cup Magic Shell Sauce

*Some people use Coconut oil from what I’ve been told that works great too*

Wow. That Homemade Magic Shell sauce looks easy. I like that the ingredients are very accessible (things I already have in my kitchen.) It’s almost dangerously accessible though, haha.

It's interesting that you mention feeling "guilt" after eating delicious food. In a recent health study, when asked what word they associated with food, the French said "joy" while the Americans said "guilt." Pretty interesting. Although I completely agree with you Xhiljola. I feel guilty afterwards too.
